Masala Vada
A crunchy South Indian delicious recipe.
Steps

Wash and soak chana dal and rice for 5 hours. Soak red chillies for 2-3 hours.

Drain the dal and crush it in mixer with green chillies, ginger and garlic. Crush coarsely without adding water.

Chop onion, coriander, soaked red chillies snd curry leaves. Add salt and hing into the coarsely crushed dal mixture. Mix.

Add in the chopped vegetables. Mix very well. The dal mixture will bind once the onions release the moisture. Add in hot oil. Mix well for 3 minutes.

Heat oil for deep fry. Shape masala vadas. Deep fry in medium hot oil. Fry to 50% level and take out the vadas.

Before serving refry the vadas on medium flame until crispy outside and soft inside.
