Ingredients

10 minutes
8 x 10cm Pancakes
  • 1medium size Sweet Potato *300 to 350g
  • 2Eggs
  • 1/4 cupBrown Sugar *OR White Sugar
  • 1/4 teaspoonSalt
  • 1 teaspoonGround Cinnamon
  • 1 teaspoonGround Ginger
  • *Note: You can add some Allspice, Nutmeg OR Clove as well
  • 1/4 cupMilk
  • 2 tablespoonsOil OR melted Butter *I used Sunflower Oil
  • 1 cupSelf-Raising Flour
  • Oil for cooking

Steps

10 minutes
  1. 1

    Peel Sweet Potato and coarsely grate it.

    Combine all ingredients and mix well. *Note: You can add Sultana Raisins as well.

  3. 3

    Heat a small amount of Oil in a frying pan, non-stick preferred, over medium low heat, form pancakes, cover with a lid, and cook for 2 minutes OR until nicely browned. Then flip over, cover with a lid, and cook the other side for 2 minutes OR until cooked through.

    Enjoy with Whipped Cream, Sour Cream, Maple Syrup, Golden Syrup, Honey, etc.
