Shish Taouk is a traditional marinated Chicken Kebab of Ottoman cuisine that later became part of the Middle Eastern cuisine. In Turkish the name Shish means skewer and Taouk, also spelled as Tawook means Chicken.
Shish Taouk is basically Middle Eastern Kebabs bathed in a bold Yoghurt based marinade with Citrus, Garlic and lots of warm spices. Lebanese Shish Taouk recipe can be one of the tastiest Middle Eastern Chicken Kebabs around. It is quite a common barbeque dish in virtually every Middle Eastern Country. Persian Jujeh Kabab version can be very much similar to this. In it's most basic form, Shish Taouk is just grilled Chicken breast. However it can also be served alongside Rice and some grilled Veggies too.

It can be kept moist and super spongy in a casserole immediately after taking it off the griller. The flavours and vapours locked would result in juicy and succulent pieces of Chicken. All said and done, this is the easiest of Chicken Kebabs and also super delicious and moist. It's a must have one in our family on special occasions and celebrations.

Ingredients

20-25 minutes
6-7 servings
  • 5-6Chicken breasts cubes or chunks
  • For the marinade -
  • 15 clovesGarlic
  • 2big sized Lemons
  • 6-7 tbspplain Yoghurt
  • 6-7 tbspOlive Oil
  • 1 tspWhite Pepper powder
  • 1/4 tspPaprika
  • 1/4 tspground Ginger
  • 1/2 tspThyme
  • 1 tbspTomato paste
  • 2 tbspSalt

Steps

20-25 minutes
  1. 1

    Cut the Chicken breasts into pieces of 2 inches each. The cubes shouldn't be too small. Otherwise they would dry quickly on the grill.

    Place Chicken in a bowl along with the rest of the marinade ingredients. Use your hands to rub the spices well until everything gets assimilated.

    Let it marinate in the refrigerator for at least 4 hours or so. Or better still overnight for that juicy texture.

  4. 4

    Skewer the chicken right before grilling. Grill it on a barbeque on a medium heat so that it doesn't dry. Overheating would spoil the texture.

    Serve it alongside any simple dip or barbeque chutney and salad of thinly sliced onions with sumac. Enjoy!

    Note: This can be used in wraps and rolls with sauces and pickled veggies, lettuce and fries. Much similar to that of a shawarma.
