Steps

In a mixing bowl, add soya flour and sooji. Add curd and water as required. Mix well. Keep aside for 10 minutes.

Now add salt, grated carrot, ginger chilli paste, and coriander. Add water to adjust idli batter consistency. For tempering, heat pan, add oil, mustard seeds, urad dal, chana dal, curry leaves, and hing. Mix well.

Keep ready, hot idli maker or steamer. Now add eno soda in batter. Stir well. Drizzle oil in each cavity of idli maker. Pour batter, sprinkle grated beetroot on it.

Steam all idli upto 7 minutes. When cooked and cools down, unmold it. Ready to serve.

Enjoy a healthy version of soya sooji idli as a breakfast, hot snack, or in tiffin box.
