Slice up the onions and potatoes in thin pieces.

Pour 1/3rd of the required oil in a semi heated pan and once it heats up, add the sliced up potatoes and onions into the pan. Keep it sautéed.Let it cook for 5-8 mins. And then cover the pan with a lid for 3 mins in medium heat so the potatoes are cooked and onions are softened.

Meanwhile, break 3 eggs into a bowl and mix well with salt and pepper powder.

Uncover the pan and once they're cooked(very slightly browned), pour them in beaten egg mix bowl.

Add the rest of the required oil in the same pan and add the constituents of the egg mix and let it cook in medium heat.

Once the omelette is cooked from one side, put a plate on top of the pan and away from flame, turn it over to let it cook from the other side as well. In 3-4 mins it's gonna be done from both sides. Cut it accordingly and cherish!
