I wanted to try out my new hand mixer, so I made this dessert. By the way, tiramisù tastes great with any kind of cookies (ladyfingers, Pavesini, amaretti), even though ladyfingers are the classic choice.

I wanted to try out my new hand mixer, so I made this dessert. By the way, tiramisù tastes great with any kind of cookies (ladyfingers, Pavesini, amaretti), even though ladyfingers are the classic choice.
Steps

Place the mixer beaters in the freezer for a while. Meanwhile, brew the coffee and let it cool.

Beat the egg yolks (cold from the fridge) with the sugar until thick and fluffy.

Add the mascarpone (also cold from the fridge) and mix until you have a smooth, thick cream.

Assemble the tiramisù: Spread a layer of mascarpone cream in a baking dish, then add a layer of Pavesini (or other cookies) lightly dipped in coffee. Add another layer of mascarpone cream, and repeat until you use up all the ingredients. Finish with a dusting of cocoa powder and refrigerate.
