Slice onions and caramelize slowly in a pan on medium low

To filets that have been rested at room temperature for at least 30 mins, salt and place on a medium hot pan. Depending on how thick your filets are, I cooked mine for about 7 mins and let it rest in foil for 10 mins.

For the sauce: combine soy sauce, sake, mirin, sugar, and bonito flakes in a small sauce pan and heat till warm

Assemble: to a bowl add rice, top with onions and layers of thinly sliced filet mignon, add sauce on top of meat and to the side add a small dab of wasabi
