This super easy vegetarian bún riêu is perfect for hot days. If you can't find tofu curds, you can use soy milk: bring it to a boil, then add a little vinegar or lemon juice. The soy milk will curdle and rise to the top, forming the 'riêu'.

This super easy vegetarian bún riêu is perfect for hot days. If you can't find tofu curds, you can use soy milk: bring it to a boil, then add a little vinegar or lemon juice. The soy milk will curdle and rise to the top, forming the 'riêu'.

Sauté the tomatoes until very soft.

Add the tofu curds (including any liquid) and cook together. Season with vegetarian fish sauce, vegetarian seasoning powder, and mashed fermented bean curd. Simmer on low heat for 5 minutes, then add enough broth. Adjust seasoning to taste.

To serve, place cooked rice vermicelli in a bowl, ladle the broth over, and top with fresh herbs.
