Ingredients

Serves 5-6 servings
  • 2 tablespoonsolive oil
  • 1 cupdiced onion
  • 3 clovesgarlic, thinly sliced
  • 3/4 cupdiced celery
  • 3/4 cupdiced carrot
  • 1 cupdiced squash
  • 1/3 cupdiced green bell pepper
  • 1/3 cupdiced red bell pepper
  • 1 tablespoonchopped fresh oregano
  • 1 tablespoonchopped parsley
  • 1 cupcorn kernels
  • 1 3/4 cupspeeled tomatoes, diced, with their juices
  • 8 1/2 cupsvegetable broth or water (2 liters)
  • 1 1/2 cupslentils
  • 2 teaspoonssalt, or to taste

    Check the lentils for any small stones or debris and rinse them well. In a large pot, heat the olive oil and cook the onion and garlic until translucent and fragrant.

    Add the celery, carrot, squash, bell peppers, oregano, and parsley. Cook until the vegetables begin to soften. Add the corn, tomatoes, lentils, vegetable broth or water, and salt.

    Bring to a boil, then reduce the heat and simmer for about 45 minutes, or until the lentils are tender.
