Prepare the cucumber-Peel the cucumber and slice it lengthwise, scrape out the seeds using a small spoon and cut cucumber into 1/4 inch slices. The slices will look like half moons. Sautee till golden brown, about two minutes. You don't need oil but you can use cooking spray.

Spread bottom slice of bread with the ricotta cheese, lay cucumber slices on top of the cheese and then lay the corned beef on top of the cucumber slices. Slather the top slice of bread with the sandwich spread. Cover with this top slice and complete your sandwich. Cut the sandwich and enjoy!
