Ingredients

  1. 1 poundground chicken
  2. 6sweet peppers (ají cachucha or substitute with mini sweet peppers)
  3. 5 clovesgarlic
  4. 2medium onions
  5. 2fresh oregano leaves (or 1/2 teaspoon dried oregano)
  6. 2 teaspoonsground cumin
  7. 3/4 cupbreadcrumbs (about 75 grams)
  8. 2 teaspoonssalt
  9. 2 tablespoonstomato paste
  10. 2 tablespoonsoil for sautéing
  11. 1 teaspoonvinegar
  12. 1/2 cupdry white wine (about 120 ml)

    Chop half of the seasonings: garlic, onion, and sweet peppers. Place them in a bowl with the ground chicken. Add 1 teaspoon salt, vinegar, and 1 teaspoon ground cumin. Mix well to combine.

    Add the breadcrumbs and mix again.

    Once the ground chicken is well combined with the other ingredients, shape the mixture into meatballs with your hands lightly greased. Set aside.

    To make the sauce, chop the remaining garlic, sweet peppers, and onion. In a pot, heat the oil and add the chopped vegetables. When they start to release their juices, add the tomato paste and stir well. Pour in the dry white wine, then add the meatballs, bay leaf, and 1 teaspoon cumin. Cook for 20 minutes.

    After that time, check the sauce. If needed, let it thicken a bit more. Enjoy your delicious chicken meatballs.
