Ingredients

  1. 3tomatoes
  2. 1onion
  3. 1-inch piece ginger
  4. 6-8garlic cloves
  5. 4 tablespoonsoil
  6. 1/2 teaspoonturmeric powder
  7. 1 teaspooncoriander powder
  8. 2 teaspoonsred chili powder
  9. 1/2 teaspoonmustard seeds
  10. 1/2 teaspooncumin seeds
  11. 1/6 teaspoonasafoetida (hing)
  12. 5-6curry leaves
  13. 1dried red chili
  14. Salt to taste
  15. 4 tablespoonsplain yogurt
  16. 1/2 teaspoonjaggery (optional)
  17. 1 bowlsev or gathiya (crispy chickpea noodles)
  18. For the paratha::
  19. 1large bowl whole wheat flour
  20. 2 tablespoonsoil
  21. Salt to taste
  22. as neededWater
  23. Oil as needed for cooking parathas
  24. as neededCilantro
  25. For serving: papad and buttermilk

    First, gather all the ingredients. In a small bowl, mix all the spices with a little water to make a paste.

    Chop the onion and two tomatoes. Blend one tomato, ginger, and garlic in a mixer to make a paste. Heat oil in a pan and add mustard seeds and cumin seeds.

    Add curry leaves and dried red chili, then add the chopped onion and sauté. Add asafoetida and mix well.

    Once the onion is sautéed, add the spice paste and mix. Cook until the oil separates, then add the chopped tomatoes.

    Add salt, mix, and cover. While the tomatoes are cooking, prepare the dough for parathas. In a bowl, add whole wheat flour, salt, and oil.

    Add a little water and knead into a smooth dough. Cover and let it rest. Once the tomatoes are cooked and the oil starts to separate,

    Add the tomato-ginger paste and mix. Whisk the yogurt.

    Add the yogurt and jaggery (if using), mix well, and cook until the oil separates. Turn off the heat.

    Take a portion of the dough and roll it out for paratha. Brush with oil, sprinkle with dry flour, and fold.

    Fold into a triangle and roll out again. Heat a griddle and cook the paratha.

    Brush both sides of the paratha with oil and cook until golden. Repeat for all parathas. When ready to serve, add sev (gathiya) to the sabzi and mix. Top with more sev and garnish with cilantro.
