First, gather all the ingredients. In a small bowl, mix all the spices with a little water to make a paste.

Chop the onion and two tomatoes. Blend one tomato, ginger, and garlic in a mixer to make a paste. Heat oil in a pan and add mustard seeds and cumin seeds.

Add curry leaves and dried red chili, then add the chopped onion and sauté. Add asafoetida and mix well.

Once the onion is sautéed, add the spice paste and mix. Cook until the oil separates, then add the chopped tomatoes.

Add salt, mix, and cover. While the tomatoes are cooking, prepare the dough for parathas. In a bowl, add whole wheat flour, salt, and oil.

Add a little water and knead into a smooth dough. Cover and let it rest. Once the tomatoes are cooked and the oil starts to separate,

Add the tomato-ginger paste and mix. Whisk the yogurt.

Add the yogurt and jaggery (if using), mix well, and cook until the oil separates. Turn off the heat.

Take a portion of the dough and roll it out for paratha. Brush with oil, sprinkle with dry flour, and fold.

Fold into a triangle and roll out again. Heat a griddle and cook the paratha.

Brush both sides of the paratha with oil and cook until golden. Repeat for all parathas. When ready to serve, add sev (gathiya) to the sabzi and mix. Top with more sev and garnish with cilantro.

Your Sev Tamatar Sabzi with Paratha is ready to serve. I served it with papad and buttermilk.
