Ingredients

15 minutes at 350°F (180°C) in the oven
Makes about 30 cookies
  1. 1 1/4 cupsall-purpose flour (about 150 grams) / 1 teaspoon baking powder
  2. 1egg
  3. 7 tablespoonscold unsalted butter (about 100 grams)
  4. 1 cup grated Parmesan cheese (about 100 grams)
  5. 1 teaspoon dried thyme / black pepper / pinch of Espelette pepper
  6. 2 3/4 ounces prosciutto or cured ham, diced small (about 80 grams)

Steps

15 minutes at 350°F (180°C) in the oven

    Sift the flour and baking powder into a mixing bowl. Add the cold butter and work it in with your fingertips or a whisk until the mixture looks sandy.

    Add black pepper, dried thyme, a pinch of Espelette pepper, the diced ham, and the egg. Mix until the dough comes together in a ball.

    Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

    Take the dough out and let it come to room temperature. Shape into small balls (about 1/2 ounce or 15 grams each), flatten them into small discs, and top each with a few thyme leaves and a pinch of Espelette pepper.

    Bake at 350°F (180°C) for about 15 minutes, keeping an eye on them so they don't overbake.
