Sift the flour and baking powder into a mixing bowl. Add the cold butter and work it in with your fingertips or a whisk until the mixture looks sandy.

Add black pepper, dried thyme, a pinch of Espelette pepper, the diced ham, and the egg. Mix until the dough comes together in a ball.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Take the dough out and let it come to room temperature. Shape into small balls (about 1/2 ounce or 15 grams each), flatten them into small discs, and top each with a few thyme leaves and a pinch of Espelette pepper.

Bake at 350°F (180°C) for about 15 minutes, keeping an eye on them so they don't overbake.
