Theres a woman run latino restaurant near me thats run by woman. Im sorry, but the latino ladies always seem to make the best food. Needless to say, they make an incredible Arroz con Pollo, and I asked for the recipe. They wouldnt give me everything, nor would they give me the amounts, so I did my best. Turned out delicious in my opinion. I hope you try this and enjoy it as much as I did.

Arroz con Pollo

Ingredients

4 servings
  1. 1 cuplong grain white rice
  2. 1 TbspExtra Virgin Olive Oil
  3. 1 Tbspspanish rice seasoning
  4. 1 tspground oregano
  5. 1 tspground turmeric
  6. 1 tsponion powder
  7. 4roasted garlic cloves, regular is fine
  8. 1 candiced tomatoes 14 oz drained
  9. 2 cupschicken broth
  10. 4bone in skin on chicken thighs
  11. 4chicken drumsticks
  12. 1green pepper chopped
  13. 1yellow pepper chopped
  14. 1red pepper chopped
  15. 1medium yellow onion chopped

Cooking Instructions

    Soak rice in water for 30 minutes to remove starch, draining water occasionally. You want to remove as much starch as possible so that the rice doesnt get siuper sticky, and clumpy. Makes for a better end product

    Season chicken with salt and pepper, about 1/2 tsp kosher salt, 1/4tsp pepper.

    Heat oil in deep frying pan, brown chicken for around 8 to 10 minutes over medium high heat

    Remove chicken and let rest on sheet pan

    Drain all but 2 tbsp of fat from pan, turn heat down to medium low and add peppers, and garlic, turmeric, rice seasoning, onion powder, oregano, and sautee for 3 minutes and add onion. Saute for an additional 3 minutes.

    Add tomatoes, chicken broth and rice, stir to mix. Place chicken on mixture and partially cover. Cook for 20 to 25 minutes or until rice has absorbed most of liquid.

    Smell the goodness and enjoy my friends.
