Ingredients

4 servings
  1. 1 lbskinless boneless chicken, cut to bite size pieces
  2. 1/4 tspsalt
  3. 1/4 tsppepper
  4. 2 tspolive oil
  5. 2bell peppers, chopped
  6. 1onion, chopped
  7. 3garlic cloves, minced
  8. 1 cuplong-grain white rice
  9. 1/2 tspsaffron
  10. 1 can (14 1/2 oz)diced tomatoes
  11. 1 cupchicken broth, fat-free
  12. 1 cuppeas

Steps

  1. 1

    Season chicken with salt and pepper. Heat 1 tsp oil in large skillet, add chicken and cook until browned. Transfer chicken to plate.

  2. 2

    Add remaining 1 tsp of oil and saute peppers, onion and garlic, cook until tender.

  3. 3

    Add rice, stirring frequently, cook for about a minute. Add tomatoes, saffron, broth and chicken.

  4. 4

    Bring to a boil and reduce heat. Simmer, covered until the liquid is absorbed and chicken is cooked through. About 20 minutes.

  5. 5

    Stir in peas, cook until heated through.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
