Soak sabudana in 1/4 cup water or in deeping level water for 2 hours until soft.

Squeeze grated lauki to remove excess water.

In a pan, heat ghee. Add jeera and curry leaves for tempering.

Add lauki, a little salt, green chilli, and ginger. Sauté until 80% cooked.

In a bowl, mix sabudana with salt, sugar, pepper, peanut powder, lemon juice, garam masala, and coriander.

Add sabudana mixture to the pan. Cook, stirring occasionally, until sabudana turns translucent.

Serve hot, garnished with extra coriander if desired.
Tips
Squeeze the lauki well to avoid a mushy texture and soak sabudana in just half the water of its quantity for optimal results.
