I had 4 eggs nearing their expiration date, so I tried this recipe. The texture is somewhere between a custard tart and an egg flan. It's a quick recipe for a small evening dessert.

Arrange your ramekins in a deep baking dish or roasting pan. Prepare the caramel and pour it into the bottom of each ramekin.

Crack the eggs and whisk them. Add the sweetened condensed milk and whisk, then add the milk and vanilla extract.

Pour the egg and milk mixture into each ramekin. Add water to the baking dish until it reaches halfway up the sides of the ramekins.

Bake at 340°F (170°C) for 30 minutes. Check doneness by inserting the tip of a knife—do not overbake!

Carefully remove the ramekins from the baking dish. Sprinkle 1/2 teaspoon sugar on top of each and caramelize with a kitchen torch for a crunchy topping. Chill in the refrigerator for at least one night.
