Boil the rice and let it cool.

In a bowl, mix rice, besan, coriander, turmeric, red chili powder, salt, and garam masala.

Shape the mixture into kofta balls.

Deep-fry the kofta until golden brown. Set aside.

Blend wheat flour, tomato, onion, garlic, green chilies, and ginger into a smooth paste.

Heat oil in a pan. Add curry leaves, dried red chilies, bay leaf, mustard seeds, cumin seeds, and asafoetida for tempering.

Add the blended gravy paste and cook until oil separates.

Pour in the buttermilk and bring to a boil.

Add red chili powder, turmeric, salt, coriander-cumin powder, and garam masala. Simmer for 2-3 minutes.

Add the fried kofta to the gravy and cook for 5-7 minutes until the gravy thickens.

Garnish with fresh coriander and serve hot with roti or paratha.
Tips
For softer kofta, ensure the rice is well-mashed and let the mixture rest for a few minutes before shaping.
