Ingredients

Prep time-10 mins, Cooking time -15 mins
2 servings
  1. 1 cupred pumpkin washed, peeled and cubed
  2. 1/2 tspturmeric powder
  3. 1/8 tspsalt
  4. Coconut paste
  5. 1/4 cupcoconut cut into small pieces
  6. 1 sprigcurry leaves
  7. 2/3whole red chilli
  8. 1 tspcumin seeds
  9. 1 Tbspcoconut oil
  10. Tempering with grated coconut
  11. 3-4 Tbspgrated coconut
  12. 1 Tbspcoconut oil
  13. 1/4 tspmustard seeds
  14. 1/2 tspUrad dal

Steps

Prep time-10 mins, Cooking time -15 mins
  1. 1

    Wash the red pumpkin, peel and cut into cubes

    Add to a pan, add turmeric powder, salt and water and bring it to boil. The water should be absorbed fully.

    Once the red pumpkin is cooked, add a paste of cut coconut, cumin seeds and whole red chilli, mix well

    Tempering - in a pan heat coconut oil, add grated coconut, stir to turn brown, add mustard seeds and Urad dal. Stir together and garnish on cooked pumpkin

Tips

During tempering use fresh grated coconut with mustard seeds and Urad dal as it gives a distinctive flavour
