Honey Fig cupcakes

A soft and fluffy vanilla cupcake with a honey whipped cream frosting, topped with a honey roasted fig and an extra drizzle of honey to finish. This cupcake feels like the end of summer wrapped up. I love that it’s a little bit more of an extravagant bake, whilst also being fairly simple to make.

A soft and fluffy vanilla cupcake with a honey whipped cream frosting, topped with a honey roasted fig and an extra drizzle of honey to finish. This cupcake feels like the end of summer wrapped up. I love that it’s a little bit more of an extravagant bake, whilst also being fairly simple to make.

Preheat oven to 180*c/350*f/Gas Mark 4/160*c Fan Oven.

Line a cupcake tin with cases and set aside.

Place the margarine and sugar into a bowl and using an electric mixer beat together until light and fluffy.

Add the eggs, self-raising flour, milk and vanilla paste to the mixture, blending until fully combined.

Cook for 16 to 20 minutes, until golden brown and light and fluffy. You can tell the cakes are ready when they spring back when lightly pressed. You could also insert a skewer into the middle of one of the cakes and if it comes out clean, then the cakes are ready.

Once ready, remove from the oven.

Allow the cakes to sit in the tin for roughly 5 minutes, then place on a wired rack

While waiting for the cakes to cool start to make the honey roasted figs. Place the sliced figs into a frying pan and drizzle with honey on top, enough to cover the figs, and fry in a non stick pan until they start to go gooey, turning over frequently, you'll know when they're ready. Again, with these you can cook them until you've reached your desired consistency. Set aside and allow to cool before applying to the top of your cake.

Time to make the icing. Add the butter to a mixing bowl and using an electric mixer, blend until creamy

Add half of the sieved icing sugar to the bowl and using a spoon, gently stir together until just combined (this helps to prevent an icing sugar explosion!), before mixing with the electric mixer

Add the remaining icing sugar and honey and follow the steps above, do not be afraid to overmix, you want this to be nice and smooth. I also recommend that you taste as you go, adding any more or less honey to fit your taste and preference

Add the whipping cream and blend on low for a few minutes. Then change to high for roughly 5 minutes, it may seem curdled but keep whisking and you will get pass that stage

Place in a piping bag and decorate your cupcakes, or simply pile on top of each cake with a knife or the back of a spoon

Once the cakes are covered in frosting, add a roasted fig slice and an extra drizzle of honey.
Tips
Store in the Fridge for 2-3 days. Allow to reach room temperature before serving.
