Easy granola for healthy breakfasts

I have been making granola for years now (actually I just noticed I shared a recipe here almost 10 years ago when I started 😊) and by now I think I have really mastered the best possible version in terms of taste and texture. Here is the recipe I usually stick to these days, although of course if you have other nuts or seeds or dried fruit you can just throw them in and mix and match until you create the taste that best suits you. I have put the measurements I more or less follow but again, you can add more or less of anything. I have been on a bit of a get fitter and healthier streak for the past year, and I know lots of people say you should stick to protein-heavy breakfasts at my age. But I believe in the power of listening to your body and getting maximum enjoyment from meals, and in the mornings mine says "Sweet and healthy please 😋", so I usually have a portion of this granola with kefir or yoghurt and some fresh seasonal fruit and that helps me to kick off the day with both high energy and great enjoyment.

Ingredients

10 mins prep, 35 mins oven.
14 servings
  • 500 grmixed brown flakes (oats, wheat, barley and rye)
  • 100 grcashew nuts
  • 100 grpeeled pistacho nuts
  • 100 grpeeled almonds
  • 50 grpeeled hazelnuts
  • 150 grbag mixed seeds
  • 50 grpumpkin seeds
  • 200 grdried cranberries
  • 100 grdried apricots
  • 1 pinchsalt
  • 75 mlmaple syrup
  • 125 mlolive oil

Steps

10 mins prep, 35 mins oven.

    Pre-heat the oven at 180ºC (356ºF). Put all the dry ingredients (not the fruit) in a big bowl and mix. Heat the maple syrup and olive oil for 30 seconds in the microwave (or in a small pan if you don't have a microwave), add to the mix and stir well so that all the ingredients get coated in the mixture. Spread out on the oven tray lined with baking paper.

    Put the tray in the lower half of the oven (so that the seeds and nuts on top don't burn) and leave for 15 minutes. Go back and move the mixture around a bit, and then close the oven door again for another 10 mins. Then turn the heat off and leave to cool inside the oven for another 10 mins (I have found that that helps to crisp the granola up). Take the tray out and leave to cool completely. Put the dried fruit in a large bowl. Cut the dried apricots into about 8 pieces per apricot

    Add the cool granola to the bowl. You can do this easily by pulling up two opposite sides of the baking paper and closing one end, making a funnel. Then simply pour the contents into the bowl. Stir well and then store in an air-tight jar. Enjoy!!

Born in the UK, I came to Spain after graduating many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day.
