Ingredients

1 serving
  1. 57 gWhole Wheat Penne Pasta or Pasta of Choice
  2. 1/4 tbspor 3g Olive Oil
  3. 1/2 tspor 2g Minced Garlic
  4. 55 gSliced Mushroom
  5. 20 gChopped Spinach
  6. 170 gPasta Sauce
  7. PinchDried Italian Seasoning
  8. PinchSalt
  9. 15 gShredded Mozzarella
  10. 25 gFresh Mozzarella
  11. (optional) Fresh Oregano for garnish

Steps

  1. 1

    Preheat the oven to 375 degrees F.

  2. 2

    Cook the pasta according to package directions and drain, set aside.

  3. 3

    While the pasta is cooking, heat the olive oil in large cast iron skillet.

  4. 4

    Lightly sauté the garlic, then add in the sliced mushrooms.

  5. 5

    Cook for 5-7 minutes, or until they begin to soften.

  6. 6

    Add the chopped spinach and turn off the heat.

  7. 7

    Quickly add the pasta, pasta sauce, Italian seasoning, and salt.

  8. 8

    Mix in the shredded mozzarella.

  9. 9

    Top with sliced mozzarella (or more shredded mozzarella).

  10. 10

    Bake for about 20 minutes, let cool slightly, and enjoy!
