Crispy Garlic Butter Baked Potatoes

Preheat oven to 426 °F (200-218 °C). Line baking tray with aluminum foil. Next, Slice each potato THINLY, stopping before cutting all the way through. Brush potatoes with olive oil. Bake for 45 - 55 mins or until the slices on the potatoes are slightly 'open'. They should be almost tender.

In the meantime, Prepare garlic. See pic below.

Next, over medium heat, melt butter with a tsp of olive oil in a pan. Add garlic, salt and pepper to this melted butter and cook for few seconds. Turn off the heat. Tip: Add dried herb now, if using.

Remove baked potatoes from the oven. Generously brush some garlic oil over the potatoes, making sure to butter in between slices as well. Tip: Lightly sprinkles some salt and pepper if you think your butter is not salty enough.

Bake again at 200°C for 15 - 25 mins or until potatoes are golden and tender.

Remove potatoes from the heat. Top with remaining garlic oil and serve.
