Kashmiri Dhaniwal/Daniwal Korma is a classic and an aromatic dish from the Kashmiri Wazwan feast, primarily featuring Lamb or Chicken cooked in a rich, yogurt-based gravy and finished with a generous amount of fresh Coriander Leaves. Unlike other Korma, it typically avoids Red Chilies, relying on Black Pepper for spice. Traditionally made with Lamb, Chicken variations are also common. It's a creamy and a smooth gravy made from 'cooked Yoghurt ' and a paste of fried Onions. It has no Red Chillies and the heat primarily comes from Green Chillies and Black Pepper. It is mildly spiced, rich and fragrant characterised by the fresh citrusy aroma of the Coriander Leaves and the tang of Yoghurt.
Whole spices like Cloves, Green and Black Cardamoms, Cinnamon and Cumin gives it a unique flavour profile. All in all, a lovely dish from the most beautiful place on Earth - Kashmir. It's absolutely refreshing and flavourful. A perfect choice for any party or celebrations or special occasions. It's absolutely the best and suffices a large number of crowd or a big gathering. It's also a vibrant meal for the Weekends and special holidays.

Add whole spices, salt, garlic paste, turmeric powder and the lamb bone-in along with a glass of water to a cooker directly. Pressure cook until done.

In a separate pan, bring yogurt to a boil on a high heat, stirring constantly. Do not let it split. Set aside. You can add a teaspoon of gram flour or besan or even an egg to avoid splitting. However i didn't use any of them.

Heat oil in a kadai. Add onion paste, fennel, coriander, cumin powders and garam masala. Saute gently. Do not brown onions much. Red Chilli powder can be totally skipped.

Add boiled yogurt and cooked meat to the onion mixture. Mix well.

Simmer until the gravy is semi-thick.

Fry coriander leaves in ghee and use as garnish. This is the characteristic feature of this lip-smacking dish. Enjoy!
Tips
Ensure to stir the yogurt continuously while boiling to prevent it from splitting. If it still splits, blend in to get a smooth liquid.
