Loaded Potato Soup

Peel and dice potatoes, soak in ice water while preparing the rest of the dish

Cook bacon, remove from pan

Remove excess bacon fat leaving about 1 T. Add 3 T butter and melt together

Add half of seasonings (garlic salt, onion powder, black pepper, seasoning salt, and salt) with diced onions and minced garlic. Saute until translucent

Add 2 T butter. Gradually whisk in flour, making sure to whisk immediately to prevent burning the flour. Cook for 2 minutes.

Add chicken broth making sure to dissolve any remaining chunks of flour. Slowly add milk and heavy cream

Bring to a boil and add your diced potatoes. Boil for 20 minutes until potatoes are tender

Mash potatoes in pot, leaving some chuck. Simmer 1-2 minutes

Add remaining seasonings, cooked bacon, sharp cheddar cheese, and sour cream

Garnish with extra cheese, sour cream and green onions or chives
