Ingredients

8-10 people
  1. 8 ozBacon, chopped
  2. 1Onion, large, diced
  3. 2large potatoes, cut into 1/8ths
  4. 1Carrot, diced
  5. 2 stalksCelery, diced
  6. 2 clovesGarlic, minced
  7. 1 canPlum Tomatoes, undrained, coarsely chopped
  8. 1 cupClam juice
  9. 3 tbspTomato paste
  10. 3 tbspParsley, freshly chopped
  11. 1/2 tspsalt, kosher
  12. 1/2 tspblack pepper, freshly ground
  13. 1small pinch Saffron
  14. 2 1/2 poundsjumbo scallops and/or cod, cut into 1½ inch pieces
  15. 4 cupswater

Steps

30 minutes
  1. 1

    Press sauté; cook bacon in pot until crisp. Drain all but 2 tbsp of drippings.

  2. 2

    Add onion, carrot, celery and garlic to pot; cook and stir for 5 minutes or until vegetables are softened.

  3. 3

    Add tomatoes with liquid, water, potatoes, clam juice, tomato paste, parsley, salt, pepper and saffron; cook and stir for 2 minutes.

  4. 4

    Close lid and move pressure relief valve to “sealing” position.
    Cook at HIGH pressure for 5 minutes. When complete, press Cancel and use QR.

  5. 5

    Add fish to pot; close lid and seal. Cook at LOW pressure for 1 minute.
    When complete, use QR and serve hot.

  6. 6
