Cheesy Spinach and Egg Muffins

These muffins have become a problem in my
house😂I have to stop myself from eating 3 at a time! They are the perfect middle ground between an egg bite and an actual muffin.
Add bacon/other protein, or some chopped tomatoes! I like to use Mexican blend shredded cheese and add crumbled turkey bacon.
You can of course use the full fat version of all of the ingredients for a richer flavor! That’s just usually what I have in my fridge.

Preheat oven to 375°.

In medium bowl, whisk together dry ingredients (flour, baking powder, spices).

In a large bowl, whisk eggs until smooth.

Whisk in Greek yogurt, cream cheese and oil until mostly smooth (small cream cheese bits are okay).

Add dry ingredients to wet ingredients and mix until just combined - do not over mix.

Fold in cheese, spinach, and green onions (and any proteins).

Divide batter evenly into greased muffin tin.

Bake 18-25 mins until golden brown and a toothpick comes out clean.
