  1. 1 cupraw pearl barley
  2. 2.5 literswater
  3. 1pandan leaf - knotted
  4. to tasteRock sugar
  5. ✅️NOTES
  6. Pandan
  7. Rock sugar
  8. This tea
  9. crushed mint leaves, a slice of lemon, slices of ginger

Steps

    Below is the image of raw pearl barley tea we used. Can be found at most Asian groceries.

    Scoop a cup of pearl barley. Wash under running tap water and transfer into a pot with 2.5 liters of water. Cover with a lid.

    Bring to a rolling boil. Once boiling, simmer for 45 - 60 mins or until the pearls are very soft to eat. Add knotted pandan leaf 🍃(leaves) 10-15 mins before you turn off the heat. Add sweetener of your choice. Remove pandan once it's done. Serve hot or warm. Add some pearls into your serving cup.

Tips

1. The pearls can be made into sweet porridge as well. You can add few TBSP of tapioca pearl to thicken the porridge and sufficient amount of coconut cream to make it into creamy version.
2. For a savoury version, make it into soup, use white egg or corn slurry to thicken the soup and add chopped vegetables to make it better.
