Worlds Best (I Mean It) Khao Kha Moo – Thai Braised Pork Leg. Meal for 6-10 for $3 - Woweeee Enjoy:P

This is one of the dishes that I used to eat once or twice a week in the local market for lunch and it used to cost about 50-60 THB or $1.50-$2 and it was amazing and wonderful. Then I started cooking myself and WOW its better and you get 12x the amount. Depending on where you are is how you can buy this pc of pork, I live in Thailand now so it come attached with the trotter (which the butcher will always saw off - it also makes amazing soups - recipe later lol) - I use presure cooker but easy to do stove top or slow cooker. ENJOY :P

Ingredients

5 mins prep 1:30 hours cooking
6-10 people
  • 1.5-2 KgBone in Pork leg
  • 3 TbspDark Soy
  • 3 TbspLight Soy
  • 3 TbspOyster Sauce
  • 1Little Water (approx) Enough to 3/4 fill pot
  • Aromatics:
  • 4Star Anise
  • 2 SticksCinnamon
  • 4 TbspChinese 5 Spice Powder
  • 3 TbspSugar Cane Sugar
  • 3roots (the Stem only) coriander - bruised
  • 2 ClovesGarlic - Crushed
  • 1 TbspWhite Peppercorns - Lightly cracked
  • To finish the Sauce:
  • 5 TbspSugar Cane Sugar
  • 1-2 TbspChinese 5 Spice Powder
  • Nam Prik Som (Chilli Vinegar Sauce):
  • 2Red Spur Chilli - you can use any not too spicy chilli
  • 2 ClovesGarlic - peeled
  • 50 mlWhite Vinegar
  • 1/4 TspSalt
  • 1/2 TspSugar
  • To Serve:
  • 4Hard boiled Eggs
  • 1 Stalkkale - quickly cooked in the sauce
  • 5-10Small Garlic
  • 5-10Thai Bird Chillies
  • 1 PortionEach - Thai Jamine rice - to soak up all the juices

Steps

5 mins prep 1:30 hours cooking
  1. 1

    Put the Pork leg on a chopping board and make sure no hair left - in Asia they actually better than the west as we eat so much pork - if any left easy to burn off with a Brulee touch or a candle lighter. Once nice and clean pat dry.

    Turn on Pressure cooker to Saute. Spy the pork with a little oil and brown on all sides. I also use the Brulee touch to get into all areas.

    Add the Sauces and water and cook on high for 40 mins. Allow to pressure release. Turn over the pork so other side in the sauce, Then Add the Aromatics - DO NOT ADD TOO MUCH SUGAR OR 5 Spice or the bottom of pot can burn. Cook again on high for 25 mins. Allow to Pressure release.

    Now turn back to saute and add the rest of cane sugar and 5 spice Also add 4 eggs in Shells to hard boil and you should add kale or another green 1 min before end- allow to cook and slightly reduce for 5 mins.

    To make the Sauce, Grind the Chillies and Garlic into a paste (I use a pestle and mortar) then transfer into a small bowl. Add the other ingredients and mix well so sugar and salt to dissolve. Put into fridge until ready to Serve. AMAZING :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
