Cucumber and Melon Gazpacho

Cucumber and Melon Gazpacho

Steps

Peel and chop the cucumber, then place it in a large bowl big enough to hold all the ingredients.

Add the cream cheese, garlic, and mint leaves.

Chop the melon and add it to the bowl with the other ingredients.

Add the olive oil, vinegar, and salt.
- 5
Blend everything together until smooth. Adjust the amount of olive oil, vinegar, and salt to taste.

Chill in the refrigerator until ready to serve.

If you like, add ice cubes when serving for extra chill.
