Wash the tendon meet

Heat a little oil in a frying pan and sauté the ginger until fragrant.

Add the beef tendon and stir-fry until it changes color and the surface is lightly seared. Check the tender of meat using fork.

Add the instant seasoning (大川味 紅燒牛肉醬) and mix well.

Pour in 2 tbsp soy sauce and stir until evenly combined.

Bring 1.5–2 liters of water to a boil in a different pot.

Transfer the sautéed tendon and seasoning mixture into the pot.

Add 2 scallions (tied in knots), chilies, and the Chinese mixed herbs bag (宮廷滷包).

Add sugar and soy sauce. Adjust seasoning until it tastes good.

Once boiling, reduce to medium-low heat and simmer for about 30 minutes, or until the tendon becomes tender. If using very thick tendon, simmer for 1–1.5 hours for a softer texture.

Boil noodles until cooked. Quickly blanch the greens as well.

Place noodles and vegetables in a bowl, then pour over the broth and beef tendon. You can use any brand of noodles you like.

Thinly slice the remaining scallions and sprinkle on top as garnish before serving.
Tips
Notes :
If you'd like to make a smaller portion, simply reduce the amount of beef tendon and adjust the other ingredients accordingly.
