Uttappam is a thick dosa which is made out of dosa batter. Different varieties of uttappam can be prepared depending on the toppings added to it or the spices mixed in the batter.

Uttappam is a thick dosa which is made out of dosa batter. Different varieties of uttappam can be prepared depending on the toppings added to it or the spices mixed in the batter.
Steps

Wash and soak rice in water for 5-6 hours. Similarly wash and soak urad dal in water for 3-4 hours.

Grind rice and urad dal to a fine paste separately. Add salt, water and fenugreek seeds while grinding. Mix both after grinding. Dosa batter is ready. Keep it covered for 8-9 hours.

Heat a non-stick pan. Pour a ladle full of batter onto the center of the pan. Do not spread it like dosa, just allow it to remain thick and circular.

Add chopped onions and tomatoes to the thickly spread batter and add a little oil to the surrounding. Note: You can add any toppings to it like green chillies, grated carrots or capsicum to make it more colorful.

When the bottom side is cooked, flip the uttappam so that the other side also is cooked.

Serve hot with chutney or sambar.
