Stuffed karela/Bitter gourd

Peel off the zest of bitter gourd slit length wise on one side, rub all over with 1 tbsp salt and keep aside for about 30 minutes.

Squeeze the bitter gourd to remove the bitter juice and scoop out the seeds

Stuff the filling firmly into the bitter gourd, close it with the help of thread.

In a pan, heat 2 Tbsp of oil and add the bitter gourd cover it. Turn over after some time on low flame.

Stirring in between, cover it till bitter gourd cooked and browned all round. add tamarind and jaggery paste, stir and cook for 2 minutes.

Before serving remove the thread. Serve hot with chapati or paratha.
