Aambadai bisi bisi! Bisi bisi aambadai!The poojari mama'srythamic chant, the aroma of the Badai in the crowded rickety bus comes rushing to me every time I make Aambadai. It was in mid-70's when we were living in Mysore and as a part of my vow to visit the goddess residing at Chamundi hills for nine consecutive Friday's for having united me with my beloved that my husband and I used to take a bus to and from Chamundi hills. On our return journey is when we used to gorge ourselves on the delicious Aambadai, the recipe for which,I could get only years later for I didn't speak the local language then and thi is how it goes...........

Ingredients

  1. 1 cupTuvar dal . .
  2. 1 cupdal Bengalgram .
  3. 1 cupGreen gramdal
  4. 1/2 cupcoconut Finely cut pieces .
  5. 3chilly Green .
  6. Ginger . A small - piece
  7. 1/2Hing . spoon
  8. 3 strandsCurry leaves .
  9. To tasteSalt
  10. 250 mlCooking oil .

    Soak the above dals for half an hour and coarsly grind them in a blender. Cut green chilli and ginger into very small pieces. Add this to the ground dal. Then add coconut pieces, hing, curry leaves and salt.Mix well. Now heat the oil in a kadai. Take a tablespoon of  dhal and flatten between the palms and fry in hot oil. When it turns brown remove from oil. Hot crispy Aambadai is ready !

Me, though born in Kerala, was brought up in Tamil Nadu, spent my prime youth in Karnataka where I did my professional course, got married and came back to my birth place in 1978 to setup the first full fledged Speech & Hearing clinic of Kerala.
