Mooga molya randay (Green sprouts gravy)

This dish is an integral part of traditional GSB (Goud Saraswat Brahmins) cuisine. It is a must make in all GSB festivities (e.g. marriages, any pooja's like satnarayan katha, etc.).
This is one of my favorite dishes. But one thing I always regret is no matter how much ever I try this dish, still it does not match the flavors of my mom and MIL. Below mentioned is my mother-in-law's recipes...
It is a very simple dish with lots of flavors. It is generally used as a side dish

Steps

20 mins
  1. 1

This recipe needs sprouted green gram (Soak green gram in the morning and at night just drain out the water and tie it in a muslin cloth or put it in an air tight container, next morning you will get perfectly sprouted green gram).

  2. 2

Now cook these sprouted green gram with enough water just above their level. It will take about 20 mins. You can even pressure cook it for one whistle (but I like it this way)

  3. 3

Assemble 6 red chillis, pepper corns, coriander seeds first. Now heat about 1/2 tsp of oil and add the above to it. Saute for few seconds and switch off the flame.

  4. 4

Grate one whole coconut (medium). Grind grated coconut, above mixture and tamarind to a course paste (nearing fine but not too fine).

  5. 5

Once the sprouts are cooked, drain the water (once cooked the green skin floats on water just remove it before you drain water) and add the ground paste to the sprouts and generous amount of cashew nuts (you can even steam the cashew nut and add). Add some water to adjust the thickness.

  6. 6

Cook it for 5 to 6 mins and add salt to taste. Once cooked set it aside.

  7. 7

Now for tempering: take oil (coconut oil tasted good) in pan, add mustard seeds, when the splutter add 2 red chillis and asafoetida, saute for some time.

  8. 8

Then add this tempering to the sprouts gravy and cover it. Our tasty green gram gravy is ready to serve.
