BEERAKAYA PACHADI (Ridge gourd Chutney)

My liking for chutneys started when I was pregnant with my first kid. In that phase I used to ask my mom and mom-in-law to make chutneys often and I end up eating my whole meal only with those chutneys without any other side dish. My hubby too is a chutney(roti pachadi) lover, so its mandatory for me to make chutney/pachadi every other day. I personally like veggies chutneys than pickle varieties.
So, today i have made Ridge gourd chutney(beerakaya pachadi as we call in telugu). This pachadi is similar to Dondakaya Pachadi that I have already posted here in this blog. You can anytime make this chutney in a jiffy. This pachadi is a wonderful side dish for rice,idli,dosa,phulkas and rotis as well.

Take two medium sized ridge gourds. Wash and chop them into pieces without peeling skin.

Heat a pan and oil in it. Add Peanuts and roast them well. Keep it aside.

In the same pan add green chillies and fry them. Keep it aside.

Then add some more oil and add cumin seeds. Add ridge gourd pieces and saute them well till soft and it looses its moisture.

Cool everything and get ready with the remaining ingredients.

In a clean mixie jar add everything along with salt and grind it.

Serve it with hot rice with/without ghee, either ways it tastes delicious. Enjoy! :)
