Grate the paneer and keep it aside

In a bowl, prepare a yogurt mixture by adding all the spices mentioned above to the yogurt. Mix well and keep it aside.

Heat oil and ghee in a pan.Add gram flour (besan) and roast it until it becomes aromatic.

Add the chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and sauté for 1–2 minutes until the raw smell disappears.

Add the chopped tomatoes and cook until they become soft and mushy.

Pour in the prepared yogurt mixture. Keep stirring continuously to prevent the yogurt from curdling. Cook until the oil starts separating from the sides.

Add the dried fenugreek leaves (kasuri methi), crush them lightly between your palms, and mix well.

Add the grated paneer and gently combine everything. Cook for another 2–3 minutes so the flavors blend well.

Your Paneer Bhurji is ready! Serve hot with paratha or naan.
