Jollof rice with chicken and fried plantain

Ingredients

1 serving
  1. 2 halfripe Plantain
  2. 4 cupsRice
  3. Salt
  4. 2Onion
  5. 1/4 kgChicken
  6. 1Turmeric
  7. 2Garlic
  8. 1/4 kgVegetable oil
  9. 1/4 kgFresh tomatoes
  10. 3 cubesMaggi
  11. 1 teaspoonThyme
  12. 1 teaspoonCurry

Cooking Instructions

    Parboil rice for 12-15mins.drain the water and wash then keep.

    Boil the chicken for 30mins with salt,onion,maggi cubes and thyme.

    Fry the chicken for 5mins with a vegetable oil.slice and add salt on plantain fry with same oil for 3mins

    Blend the turmeric,ginger,garlic and fresh tomatoes.

    Boil leaving the pot open till the water in it evapourates.

    Pour in vegetable oil and fry for 10mins.then pour in the chicken stock and more water and boil.

    Boil for 5mins.add curry,maggi cubes,salt and thyme.

    Then pour in the parboiled rice and stir very well.cover to boil for 15mins.

    Onces the rice is dry and soft is ready.
