Jollof rice with chicken and fried plantain

Ingredients

  1. 3 piecesripe plantain
  2. Salt
  3. Groundnutoil
  4. Fresh Pepper
  5. 2Knorr cubes
  6. 1 Sachettomatoes
  7. Fresh tomatoes
  8. 1/2 teaspoonCurry
  9. 1 sachetSeasoning
  10. 4 cupsRice
  11. 1/2 kgChicken
  12. 1/2 teaspooncinnamon
  13. 1/2 teaspoonginger

Cooking Instructions

    Parboil rice for 10mins.

    Boil chicken with thyme,Curry,onion,Maggi and salt.

  3. 3

    Boil till is soft and tender.

  4. 4

    Place a frying pan on fire,add groundnutoil and fry the chicken.

  5. 5

    Blend the tomatoes,pepper and boil till the water dry up.

  6. 6

    Place a dry pot on fire,add groundnutoil and pour in the tomato paste.

  7. 7

    Fry for 5mins,and stir at the same time.

    Pour in the chicken stock,and more water allow it to boil.

    Pour in the rice and add ginger,garlic,cinnamon and seasoning.

    Cover and boil.onces the water dry up.bring down.

    Cut plantain in cubes, sprinkle salt on it and fry till is done.
