My culinary students rock! Since most Mexican restaurants that serve shrimp cocktails on Sunday in our area are closed - my youngest students decided to make me some of their own.

Mexican Shrimp Cocktails are essentially super chilly, crazy delicious, spicy salads served in frozen glasses. They're chocked full of a vast array of crunchy vegetables, fresh herbs, plump shrimp and other yummy seafoods in a spicy, citrusy, tangy clam tomato based sauce.

Excellent work kiddos! I'll be feeding off of this delicious 10 pound bowl for at least a freaking week! Thank you!

  • 3/4 CupRed Onions
  • 1 CupCucumbers
  • 1/2 CupRadishes
  • 1/2 CupCelery
  • 2EX LG Jalapeño Peppers
  • 1/2 CupGreen Bell Pepper
  • 1/2 CupRed Bell Pepper
  • 1/2 CupOrange Bell Pepper
  • 1/2 CupYellow Bell Pepper
  • 1/2 CupCilantro Leaves
  • 1/4 CupFresh Parsley Leaves
  • 4LG Cloves Garlic [thin sliced]
  • 3 tbspReal Horseradish
  • 1 tspMexican Oregano
  • 1 tspFresh Ground Black Pepper
  • ● For The Fluids & Juices
  • 1 (64 oz)Bottle Clamato Juice [we used about 3/4 bottle]
  • 2 tbspTabasco Sauce [more or less]
  • 1/2 CupFresh Orange Juice
  • 2 tbspFresh Lime Juice
  • 1/2 CupOf Your Favorite Red Chunky Salsa
  • 1 ShotTequila [optional]
  • ● For The Garnishments [as needed]
  • Tabasco Lime Salt Rim [for chilled glasses]
  • Tortilla Chips
  • Lime Wedges
  • SlicesAvacado
  • Quality Saltine Or Trisket Crackers

30 Minutes
  1. 1

    Rough chop or fine mince all of your fresh, firm vegetables.

    Immatation Crab Meat pictured.

    Shrimp and baby scallops pictured.

    The best Tequila brand to use.

    Use a nonreactive bowl and spoon to mix all vegetables and fluids.

    Add fresh herbs and seafood at the end. Chill for 3+ hours. This dish is actually better the following day.

    Serve chilled with lime wedges, avacado slices, tabasco sauce, cilantro and quality crackers. Enjoy!

My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
