Ingredients

160 minutes
Serves 6 servings
  1. 2 1/4-3 1/3 lbsboneless pork shoulder or neck (about 1-1.5 kg)
  2. 1large yellow onion
  3. 2garlic cloves
  4. 2 tablespoonscola (30 ml)
  5. 2 tablespoonsvegetable oil
  6. 1 teaspoonvinegar
  7. 1red bell pepper (or roasted red pepper)
  8. 2 teaspoonssmoked paprika
  9. 1 teaspoonhot paprika
  10. 2 tablespoonsmild mustard
  11. 1/2 teaspooncurry powder
  12. 2 teaspoonsdried oregano
  13. salt
  14. black pepper
  15. 2-3 sheetsparchment paper
  16. aluminum foil

Steps

    Rinse the pork, slice it into thin pieces, and set aside.

  2. 2

    In a food processor, blend the onion, garlic, and red bell pepper until smooth.

  3. 3

    Add the cola and vegetable oil to the food processor and blend briefly.

  4. 4

    Spread the pork slices in a baking dish and pour the blended mixture over them.

  5. 5

    Add the remaining ingredients and mix until the spices coat all the pieces. Optionally, let the mixture marinate in the refrigerator for 1 hour or up to 1 day.

    Line another baking dish with parchment paper, add the pork, wrap it well, and then wrap with aluminum foil.

  7. 7

    Pour a little water into the baking dish and bake for about 2 hours in a preheated oven at 400–425°F (200–220°C), using both top and bottom heat if possible.

  8. 8

    When done, carefully remove the meat to avoid burns, cut it into small pieces, and return it to the baking dish. Broil for about 10 minutes, or until as crispy as you like.

    Your dish is ready! Serve in pita bread with tzatziki, ketchup, mustard, and plenty of onion.
