Thinly slice the pork belly and pork shoulder. Marinate with salt, fish sauce, sugar, pepper, and finely minced shallots and garlic for about 20 minutes.
Boil the quail eggs, peel, and set aside.
Cut the tomato into wedges.
Finely mince shallots, garlic, and small onions.
Wash the fresh greens and spin or pat dry.

Heat oil in a pan. Sauté the minced shallots, garlic, and small onions until fragrant. Add a little chili powder or turmeric powder if you like for color, then quickly stir in the tomato wedges.

Add the shrimp and pork to the pan and stir-fry over low heat. Season to taste, making the flavors a bit stronger than usual.

Simmer the meat for 20-30 minutes, then add the pork bone broth and continue to cook. Taste and adjust the seasoning again. Mi Quang is typically served with a small amount of flavorful broth, so make sure the broth is well-seasoned. Add the quail eggs and cook a little longer. Now your Mi Quang topping is ready.

To serve, place the fresh greens in a bowl, add the noodles on top, then ladle the shrimp, pork, and quail eggs with some broth over the noodles. Top with sliced green onions, roasted peanuts, and pieces of grilled rice cracker. Enjoy!
Mi Quang is especially delicious served with green chili.
