Ingredients

  1. 1 poundchickpeas, soaked overnight
  2. 1 poundpeeled fava beans, soaked overnight
  3. Spices:
  4. 1 tablespooncumin
  5. 1 tablespoonfennel seeds
  6. 1 tablespoondried cilantro
  7. 1 tablespoonsalt
  8. Crushed garlic
  9. For the Tarator Sauce:
  10. 2 clovescrushed garlic
  11. Juice of 1 lemon
  12. 1/4 cuptahini
  13. 1/4 cupyogurt
  14. Pinchsalt

Cooking Instructions

    Run the soaked chickpeas and fava beans through a grinder twice.

    Add all the mentioned spices, garlic, and 1 teaspoon baking soda. Let the mixture rest for an hour, then heat plenty of oil. Shape the mixture using a falafel mold, sprinkle sesame seeds on top if desired, and fry them.
