Here is a simple side dish and a great way to use peppers. They are stuffed with angel hair pasta, marinara sauce, sausage or hotdogs and cheese then heated until hot back in the oven.

Here is a simple side dish and a great way to use peppers. They are stuffed with angel hair pasta, marinara sauce, sausage or hotdogs and cheese then heated until hot back in the oven.

Ingredients

  1. 4Italian green peppers
  2. 2small hotdogs or sasages
  3. 1 teaspoonbutter
  4. 1ccup cooked angel hair pasta
  5. 1/2 cupmarinara sauce, homemade or your favorite brand
  6. 1/2 cupItalian cheese blend, shredded
  7. 3 Tablespoonsfresh grated Romano cheese
  8. 12pepperoni slices

Cooking Instructions

  1. 1

    Preheat the oven to 425place peppers on rosting pan

  2. 2

    Roast until just starting to soften but still holding their shape

  3. 3

    Melt butter in asmall skillet and brown sausage or hotdog, then add cooked pasta and ssuce

  4. 4

    Transfer to a bowl and mix in cheeses

  5. 5

    Cut an opening in each pepper and carefully remove seeds

  6. 6

    Fill each pepper with pasta mixture, skewer to hold shape. Top eac pepper with 3 pepperoni slices, return to the oven to heat through, about 7 to 10 minutes

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
