Fried plantain and jollof rice is always finished in my house.

Ingredients

  1. 3 cupsrice
  2. Salt
  3. 3Fresh pepper
  4. 11 piecesFresh tomatoes
  5. 1big sizeable Tumeric
  6. Salt
  7. 2Knorr seasoning
  8. 1cksp Crayfish
  9. 1/2 teaspoonCurry
  10. 1/4 kgvegetable oil

Cooking Instructions

    Parboil rice for 15minutes.wash and keep aside.

    Blend tomatoes,pepper and tumeric.

  3. 3

    Peel and slice plantain,add pinch of salt.

  4. 4

    Heat up frying,add vegetable oil when is hot add gradually put the plantain.

  5. 5

    Fry for 3minutes.turn the plantain.fry till is brownish but not burnt.

    When is done,select out and lower the heat.

    Pour in the tomatoe paste.fry for at least 5minutes.

    Add more water and boil.onces is boiling add maggi,salt,onion and crayfish.

    Boil for 2minutes and pour in the rice.

    Mix very well with wooden spoon.cover to boil.

    Boil for 10mins,check it if is dry.onces the rice is dry and soft

  12. 12

    Put off the heat and enjoy jollof rice.
