sig's Pasta with Borlotti Beans, Prawns and Rosemary Oil

Ingredients

4 servings
  1. 1 canBorletti Beans, rinsed and drained
  2. 400 gramsprawns or 12 scampi
  3. 9 tbspbest olive oil
  4. 2 largeclove of roasted garlic, crushed
  5. 200 gramsshort length pasta of your choice
  6. 1 smallonion very thinly sliced
  7. 1bay leaf
  8. 2twigs rosemary
  9. 750 mlvegetable stock
  10. 1 pinchof smoked paprika
  11. 1good pinch of cayenne pepper
  12. 1 pinchsalt or salt substitute to taste

Cooking Instructions

    slice the onion very finely, cook in 3 tablespoons of the oil until soft together with the bay leaf about 5 minutes ,add the beans and the warm stock, cook slowly for about 20 or so minutes.

    Add the pasta and cook to al dente. In the meantime clean the prawns or scampi add to the pasta just before it is cooked, they only need about 3-4 minutes depending on size.

    in a little pot add the rest oil and a couple of twigs fresh rosemary and heat do not cook.

    serve the pasta in bowls, drizzle with the strained rosemary oil and a few of the leaves. Sprinkle with the black pepper.
