Ingredients

  1. 1 kgfish (tuna yellow fish)
  2. 2 cupcoconut milk
  3. 2 tbspfish sauce
  4. 5 clovegarlic, crushed
  5. 1 mediumonion, minced
  6. 3 tbspginger, cut in thin strips
  7. 1/2 tspground black pepper
  8. 2pcs. birds eye chili (optional)
  9. 3 tbspcooking oil
  10. 1 mediumeggplant, sliced in cubes

Cooking Instructions

    Heat the cooking oil in a cooking pot.

    Saute the garlic, onion, and ginger. Combine the eggplants.

  3. 3

    Add the fish sauce, ground black pepper, and chili. Stir.

  4. 4

    Pour-in the coconut milk. Let it boil.

  5. 5

    Let the coconut milk reduce to half.

  6. 6

    Put-in the fish. Stir and then cook for 8-10 minutes or until.the fish becomes tender.

    Serve with steamed rice. Serves 4. Share and enjoy!
