Kinda my version of Albondigas. I prefer my meatballs cooked before adding them to hot broth and I use leftover Spanish rice instead of potatoes. This soup has a delicate Mexican flavor that is soooo good with avocado slices. A family pleaser that is tasty, cultural and light. Enjoy 😘

We like everything natural at our house so my hubby and I came up with the idea to make our own tomatoe sauce, so simple but delicious. The great thing about this recipe is you can improvise on any vegetables you like.

Some small modifications from the Mediterranean dish recipe online. More garlic, a little less meat, and a little less pasta, and a little time for the flavors to marinate. Yum.

Seen this recipe on social media, I didn’t know that this is a thing lol! I had some leftover meatballs from my meatball pizza, so I thought I’d give this a try something different other than meatball subs or in a pasta... plus there’s is veggies in this for the kids.... good for soup and salad night (everyone seemed to like it and asked for me. I didn’t think this would be a hit in my house hold , but it was I had none left, I was surprised.) I added some seasoning not in the recipe I do recommend using your favorite seasoning.

My mom always made this for me growing up. I have always loved this dish on a cold day. Its easy and everyone loves it.

This would have been great with carrot, onion, and celery sautéed with the garlic but I didn’t have any and I’m stuck in the house!I pulled a pack of meat out of the freezer that said it was “hamburger meat” (venison) but it turned out to be sausage (no clue what spices were in it) which was great!
