Preheat the oven

Sift flour with powdered ingredients, tipping in any bran in the sieve,beat eggs slightly

Cream fat and sugar together by working them vigorously around the bowl with the back of a wooden spoon from time to time scrape the mixture down sides of the bowl,continue creaming until the mixture turns white

Add the beaten egg

Stir in fruit and lemon zest

When the flour is folded in,add milk

Shift and fold in other half of flour

Spread mixture evenly into prepared tins and bake
