My dad bakes this pizza every week to serve it during happy hour at my parents' bar

Ingredients

4 servings
  1. 1 kgflour
  2. 20 gramssalt
  3. 1/2 litersparkling water
  4. 1 tbspolive oil, extra virgin
  5. 20 gramsyeast
  6. 150 mlwater
  7. 1 litertomato passata/puree
  8. 1 tspsugar
  9. salt
  10. ground black pepper
  11. oregano
  12. mozzarella cheese

Cooking Instructions

    Put yeast in tepid water and stir (not more than 50°C) then let it rest for 10 minutes

    Put flour in a large bowl

  3. 3

    Melt salt in sparkling water and add it to the flour

  4. 4

    Add olive oil and stir

  5. 5

    Add melted yeast to the dough and knead for at least 10 minutes

  6. 6

    Form dough into balls and let them rest for 3 hours

  7. 7

    Grease a baking tray and stretch a ball of dough in it, then let it rest for 2 hours

  8. 8

    Warm a bit tomato puree/passata in the microwave or in a pan (just a bit, it shouldn't be too hot) and season to taste using salt, pepper and sugar)

    Spread tomato puree on dough

  10. 10

    Add oregano

  11. 11

    Bake at 200°C for 20 minutes

    Add mozzarella

  13. 13

    Finish baking for other 5 minutes
